This exceptional microlot coffee showcases the innovation and skill of producer Jairo Arcila at Santa Mónica farm in Colombia. Microlots are small, carefully separated batches that offer outstanding quality, traceability, and unique character, and this one truly delivers.
Using a creative honey process combined with a co-fermentation technique, the cherries underwent a 72-hour dry anaerobic fermentation with the pulp still on. Passion fruit pulp and wine yeast were added during this stage to enhance the fruit character, before the beans were pulped and dried on raised beds.
